I’ve been on a roll with this cooking and freezing thing and it has been nice because I would make a portion for us to eat and the other portion goes into the freezer.
This recipe is SUPER duper easy!
For the enchiladas, here are the ingredients
For the taquitos, everything is the same except you take away the cream cheese and corn and add 1 teaspoon of cumin and only 8 oz of green enchilada sauce instead of 20 from above. SUPER EASY!
I forgot to take a picture of the enchiladas because we were so busy trying to take care of the kids, but I did manage to get a picture in of the taquitos out of the oven and them wrapped ready for the freezer.
